Ranger cookies are a fun and classic cookies that kids have been making and eating after school (and during summer vacation) for decades!
Cream butter and sugar together. Add eggs, mix well. Add rest of ingredients. Stir oatmeal, corn flakes, and coconut by hand. Place on a cookie sheet by teaspoonfuls. Bake at 375 degress for about 10 minutes, or until golden brown.
Cream the butter with the sugar until smooth. Work in the flour and the rosemary to make a soft dough, then shape into a ball. Roll out the dough on a floured board until it is ¼” thick. Cut using a 2” round cutter. Sprinkle with raw sugar.
Bake on a greased baking sheet in a 325 degree oven for 15-20 minutes, or until the shortbread is lightly browned. Sprinkle with additional raw sugar if you wish, let them cool on a wire rack.
These super-simple treats are perfect to tuck into lunches or share with friends.
Mix all ingredients together. Drop by teaspoonfuls, about 1” apart, onto a well-greased baking sheet and flatten slightly with the back of a spoon. Bake at 350 degrees for 10-12 minutes (or until lightly browned around the edges). Remove from baking sheet immediately.
