Your Favorite Cooking and Baking Memory
First time when I helped at the lodge I belong to-- we baked 1200 kolaches - little pastries and bunch of nut rolls for a bazaar in the fall, it was a lot of fun we had like an assembly line going so it went fast.
Your Favorite Family Recipe to Share, History of Recipe
My favorite family recipe is Halusky it’s a European pasta dish --spatzles with a creamy feta sauce.
We used to make it in Europe where I’m originally from and I’ve been making it ever since, I even got Tom to like it.
Halusky
Combine:
- 1 ½ c. flour
- 1 tsp. salt
- ¼ tsp. baking powder
Beat together:
Add to the flour mixture. Beat well with wooden spoon. In a large saucepan bring to a simmer 6 cups salted water. Drop small bits of batter from a spoon into bubbling liquid or push batter thru a colander. Spatzles are done when they float to surface about 2-3 minutes. Strain them well put on serving plate and pour cheese sauce over and sprinkle cooked crumbled bacon if desired. Enjoy.
Cheese Sauce:
- 2 T. butter or margarine
- 2T. flour
- 1/4 tsp. salt
- dash black pepper
- 1 3/4 cups milk
- 1/2 cup Feta cheese
Melt butter, stir in flour, salt and pepper. Stir in milk , cook and stir on medium heat until thickened and bubbly. Cook and stir 1 minute more. Add feta cheese and stir until melted. Remove from heat and pour over spatzles.
