Simple, quick, super tasty, and red-white-blue!
Separate berries into individual bowls. In a parfait glass or tall, clear glass, layer crushed strawberries, blueberries, and raspberries in between scoops of high quality vanilla bean ice cream or frozen yogurt. (Put blueberries in middle of parfait). Optional - Top with whipped cream and one of each of the whole berries! (Serves 4-6)
Cut bread diagonally into 1” slices. Mix remaining ingredients, spread on slices. Reassemble loaf and wrap securely in a large piece of heavy-duty aluminum foil. Place on the grill 4" from medium heat (or coals). Heat for 15-20 minutes, turning twice, till cheese is completely melted.
Choose firm, medium-size baking potatoes (or yams, or sweet potatoes). Scrub potatoes and brush with olive oil. Wrap each in a square of aluminum foil overlapping the ends. Bake 45-60 minutes on the grill. Turn potatoes occasionally. Give them the fork test for doneness. When ready, fork open and push ends together to fluff. Season with butter, salt, and pepper. Top with Blue Cheese Sour Cream.
Blue Cheese Sour Cream. – Combine 1/4 - 1/3 C. of blue cheese, crumbled, 16 oz. sour cream, and 2 Tbsp. chopped chives. (Serves 4)
