Mommy's Deviled Eggs

My mommy always made deviled eggs for Easter dinner and most summer holiday celebrations. All five of us kids LOVED them and usually sniped several before we ever sat down for dinner. Her delicious basic recipe is below, but what makes these extra special are the fun garnishes for the top. It makes for some yummy, memorable deviled eggs. If you have a crowd coming over, double this recipe. 

Halve 6 hard-boiled eggs lengthwise; remove yolks and mash until smooth.

Combine with…

  • ¼ C. Miracle Whip
  • ½ tsp. sugar
  • 1 tsp. vinegar
  • ½ tsp. yellow mustard,
  • ½ tsp. salt & a dash pepper
  • ½ tsp. finely minced onion

Refill egg whites with yolk mixture, sprinkle with paprika and garnish each egg separately with either minced radishes, minced green onion tips, crumbled, crispy bacon, dill sprigs or sliced olives.

Buffalo Chicken Dip

The perfect quick-and-easy dip to serve at a party or while watching your favorite sport on television. This warm and spicy dip wil be a hit with everyone.

  • 2 cans (12.5 oz) chunk chicken (drain and shred with fork)
  • 2 - 8 oz pkgs. cream cheese
  • 1 C. Ranch dressing
  • 3/4 C. Franks Red Hot Sauce
  • 1 1/2 C. Shredded Cheddar Cheese

After cream cheese is at room temperature, blend all ingredients together. Either bake at 350 for 30 minutes and serve, or transfer to slow cooker and heat until hot and bubbly. Serve with Frito “Scoops”.

Mom Hundt's Cheese Log

 

This is a Christmas Eve classic at Linda Hundt's vast buffet table. Enjoy with crusty bread or butter crackers.

  • 1 8 oz. cream cheese – softened
  • 2 oz. blue cheese - softened
  • 1 small jar of Old English Cheese Spread –softened
  • ¼ C. of minced green onions
  • ¼ tsp. fresh rosemary finely minced
  • 1 tsp. worcestershire sauce
  • Garlic salt to taste
  • 1½ C. chopped honey roasted nuts

Mix all ingredients except for nuts with mixer until completely blended. Mold mixture in log shape and roll in nuts. Refrigerate until ready to serve.
