This easy-to-make alternative to traditional pasta makes a great side dish.
Cook couscous according to directions on box. Set aside in a mixing bowl. Heat oven to 400 degrees. Coat vegetables in oil, season with sea salt and fresh ground pepper. Roast veggies for 10-15 minutes. Add to couscous. Pour dressing over all and mix. May serve warm or room temperature… and it’s great to prepare earlier in the day.
Pour all ingredients in a jar and shake until emulsified.
